Recipe: Quick Fix During "Tingbits" - The Week Before Payday

It’s the week before pay day. When you open the pantry there’s a mouse that passed out from starvation. When you open the fridge, there’s nothing but water and lemon. Here are some quick and easy things you can put together when you’re too broke to order take out.

Tuna spread with a zing!

Don’t just mix your tuna with boring old mayonnaise. Add a dash of Worcestershire sauce and a few squirts of mustard to give it an extra kick! Serve with Onion & Chive crackers and a glass of iced tea. Yum!

Live it up liver spread

When you’re down to your last buck, don’t despair! You can buy a teeny tiny can of local liver spread (instead of expensive foie gras) and combine it with some mashed up [canned] Vienna sausage. Spread it on tasty Fita crackers and pretend you’re having fancy hors d'oeuvres.

Homemade salsa

Finely chop some fresh tomatoes, onions, and a bit of kinchay(cilantro). Drizzle it with some olive oil and the juice of one lemon. Add salt and pepper to taste. You can also include a little bit of the lemon zest and BAM! You’ve got your very own homemade salsa, perfect with tortilla chips.

Hot dawg!

Cut an onion in half, vertically. Lay it flat side down and chop so you get strips of onions. Caramelize with some oil and a sliver of butter. Slice your favorite tender juicy hotdog at an angle. Cook in with the onions. Add about 3 tablespoons of tomato ketchup and your favorite hot sauce. You can use Tabasco or Spiracha or even the tiny packets from your last pizza delivery!

When you’re down to your last jar of pickles, you’ll be surprised with what dishes you can concoct using what is left in your fridge. Just be creative and have fun with it!
