Tatang's Extra Crispy Boneless Lechon

The latest craze in Cebu cuisine is "boneless lechon." If you still haven't tried it, lemme fill you in. Instead of slow-roasting a whole pig (with head and limbs still attached), the torso is deboned and covered in its skin then infused with the same herbs and spices and roasted the traditional way. It's pure meat, no bone, no hollow space inside, all belly wrapped in crispy skin. This innovation renders very good value for money because you pay by the kilo and you can consume everything, no wasted kilos on bones! Plus, this food has no face!







Because there are several stalls claiming to be "D'original" it can be difficult to pick a place to try. But I've found one that I really enjoy. Tatang's Extra Crispy Boneless Lechon is a cut above the rest. What sets it apart [for me] is its extra crispy skin. I swear, it looks like chicharon (crackling).



Tatang's Extra Crispy Boneless Lechon is easily spotted along AS Fortuna St., cor. Hernan Cortes, Mandaue City, Cebu. There is more than enough parking so you can just drop by and pick up a kilo or two to take home, or you have the option to have some extra crispy boneless lechon right there! The perfect match to your roadside roast are sparkling cold softdrinks and puso (hanging rice), which are also available. They have Value Meals for those on the go that come with 100 grams lechon, 2 pieces puso, and a bottle of ice cold soft drinks. New on the menu is Lechon Flakes at only P80! It's a really good deal. Be prepared  to go kinawboy, as in, eating with your hands in open-air without any electric fan. There is a washing area and there are plastic gloves available for hygienic purposes. It's casual but clean.
